Quesadillas for the taste-bud challenged
Most of my family loves Mexican food. None of us like it extra-hot, but we like some spice in our tacos. Pink Pixie, however, is a supertaster. She does not like anything with a strong flavor — not just spicy, but mint and other strong flavors as well. Oh, and she HATES tomatoes. I don’t know if it’s a supertaster thing or just a personal quirk (she loves spaghetti though). Tonight I wanted to make something quick and easy for dinner and thought “Quesadillas!” I had some shredded chicken and cheese and salsa, how easy, right? Then I thought “But Pink Pixie will hate it.” So I improvised. She loves “cheesy tortillas”, just a tortilla rolled up with cheese, sprinkled with just a smidge of taco seasoning, and nuked for 30 seconds or so. So, I mixed up this little concoction:
2 cups shredded chicken (cooked)
1 cup shredded cheddar
enough French dressing to wet it all down
1tsp (or so) taco seasoning
I stirred it all up, then spread on an 8-inch torilla. Then I covered it with another tortilla and put under the broiler for 3-5 minutes (until crispy on top). The bottom wasn’t as crispy, but I think it might not be too much trouble to flip and crisp up the other side as well. Served with sour cream for dipping.
It was pronounced a keeper, and they even asked for seconds!!! I think Pink Pixie, not usually a big eater, may have even had the lion’s share. Yay, something she likes!!! Next time, I’ll make a spicy batch and a not-spicy batch.
